Ms. Betty’s Strawberry Pie

Ms.Betty is one of my dear friends. It was the year of 2020, and a sweet older woman would come to our market on a daily basis for fresh strawberries. One day I arrived at the market, and she brought me and Zach a fresh strawberry pie made with our berries. I wondered, who this amazing woman was, and Zach found out her name was “Betty”. The next time she visited, I introduced myself and told her how incredible her pie was. You could just tell it was homemade. From then on, Ms.Betty would visit, and she always bought strawberries in order to make pies for people all across our community: for the firefighters, the police officers, and even customers at our market whom she got to know.

Ms.Betty and I have continued our relationship, and she is now one of my closest friends. Last year, she invited me to come over to her home and bake pies with her, and we even made frozen strawberry preserves. We continued the tradition this year, and it is a memory I will cherish forever. She is kind, patient, and she taught me how to slow down and enjoy the simplicity of baking pies & making preserves. And I think everyone could benefit from that lesson.

Strawberry Pie

INGREDIENTS

  • 2 pie crusts, cooked & cooled

  • 2 quarts of fresh strawberries

  • 1 cup sugar

  • 6 heaping tablespoons cornstarch

  • 3 tablespoons strawberry jello gelatin

DIRECTIONS

  1. Slice berries & place in pie crusts

  2. In sauce pan, mix sugar & cornstarch until combined. Add one cup warm water and stir.

  3. Cook until thickened. Add gelatin.

  4. Pour mixture over berries & let it cool in the fridge overnight before serving.
