Aunt Sharon’s Pumpkin Cookies

One thing that makes the holidays a little extra special each year is our Aunt Sharon’s pumpkin cookies. I am not lying when I tell you that these are the best cookies you’ll ever taste. Even if you don’t like pumpkin (me🙋‍♀️), you will love these delicious treats. They are melt-in-your-mouth delicious, and we are so excited to share this recipe with you!

INGREDIENTS

Cookies

  • 2 cups butter, softened

  • 2 teaspoons baking powder

  • 1 teaspoon salt

  • 1 teaspoon ground nutmeg

  • 2 teaspoons vanilla extract

  • 4 cups all purpose flour

  • 2 cups sugar

  • 2 teaspoons baking soda

  • 1 teaspoon ground cinnamon

  • 2 eggs

  • 1 15oz can pumpkin

Frosting

  • 1/2 cup salted butter, slightly softened

  • 1 lb powdered sugar (about 3 3/4 cups)

  • 1 8oz package of cream cheese, softened

  • 1 teaspoon vanilla extract

  • ground cinnamon

DIRECTIONS

Cookies

  1. Preheat Oven to 350 degrees.

  2. Beat 2 cups of salted butter with electric mixer on medium speed until light and fluffy.

  3. Add sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and eggs. Beat until combined.

  4. Beat in pumpkin.

  5. Add in the flour slowly.

  6. Drop by tablespoon on parchment lined sheets.

  7. Bake for 10-12 minutes.

Frosting

  1. Combine all ingredients until soft and whipped.

Finally, frost your cookies and sprinkle with cinnamon!
